Fluffy, eggless pancakes, accompanied, of course, by delicious figs! If you don't like figs, combine with another fruit to taste.
(11 pancakes)
120g buckwheat flour (Simplu)
115g of whole oat flour
350 ml oatmeal drink
1 tablespoon cider vinegar
1 dessert spoon olive oil
1 dessertspoon brown sugar
1 + 1/2 teaspoon yeast
1/2 teaspoon baking soda
pinch of salt
1 tablespoon chia seeds
In a bowl put the vegetable drink together with the cider vinegar and let it sit for 10 minutes.
Meanwhile place in a bowl both the flours, the olive oil, the sugar, the baking powder, the bicarbonate, the pinch of salt and the chia seeds. Then add the vegetable drink and mix until you get a homogeneous mass.
Heat a non-stick pan with a drizzle of olive oil. Pour in portions of batter and reduce the heat to low. When the pancakes begin to loosen from the sides and air bubbles appear, it's time to flip. Repeat the process until you run out of batter.
Accompany the pancakes with figs and if you have yogurt you can also add it. Bon appetit!
