RECIPE // Cocoa cake with chocolate chips and caramelised banana

At Simplu we also have a vegan, organic chocolate with 100% natural ingredients, CHOCOLINO, which you can not only eat simply, but also use in recipes, as dear Ana Rita Lebreiro (@nutripontocome) wanted to show us in this cocoa cake recipe.


Caramelised bananas and chocolate really are a winning combination!!!


(English cake size)


3 eggs

125ml vegetable oat drink

90g oatmeal

1 tablespoon raw cocoa powder

1 tablespoon of ground linseed

87g ripe banana

2 tablespoons coconut sugar

1 teaspoon baking powder

40g CHOCOLINO Simplu


topping:


109g banana (to caramelise)

50g CHOCOLINO Simplu

vegetable oat drink to taste


Start by caramelising the banana, cutting it into 2 halves and then each half into 3. Brush a frying pan with olive oil, turn on the heat and place each piece of banana, spaced apart. When it starts to toast on one side, turn it over and let it toast on the other. Set aside.


Beat the 3 eggs in a bowl. Add the vegetable drink and the mashed banana. Mix with a whisk. Then add the oatmeal, linseed, baking powder and cocoa. Stir again until the mixture is smooth. Break the cake chocolate into small pieces and add to the batter.


Pour the cake batter into a silicone cake tin and place the caramelised banana on top. Bake at 180ºC for 30 minutes. Once cooked, remove and leave to cool slightly.


Make the chocolate creme in a bain marie by placing the broken chocolate and a little vegetable oat drink (about 2 tablespoons) in a bowl. Allow to melt and mix to make an even creme. Pour in strands over the cake. Enjoy!
