RECIPE // Blueberry and chia triffle

Inspired by our BERRY granola, organic and gluten-free, vegan and made only with natural ingredients, one of the flavours of the SENSES range, we suggest this triffle, great for breakfast or snack.

INGREDIENTS:


(for 2 portions)


6 tablespoons of chia seeds

250ml vegetable drink

125ml light natural Greek yoghurt

4 teaspoons maple syrup

2 teaspoons lemon juice


Blueberry syrup:


90g fresh blueberries

1 dessertspoon maple syrup

lemon zest to taste


Toppings:


BERRY granola

fresh blueberries



METHOD OF PREPARATION:


Place the chia seeds, vegetable drink, Greek yoghurt, maple syrup and lemon juice in a bowl. Mix well, cover and leave to rest in the fridge for 1 hour.


In the meantime make the blueberry syrup. Place all the ingredients in a saucepan, turn on the heat, bring to the boil and then reduce to a simmer until the blueberries soften and start to release their juice. Allow to cool slightly.


To assemble, place the BERRY granola in the bottom of one bowl, then some of the chia pudding, blueberry syrup, more chia pudding and finally some granola and some fresh blueberries. Repeat the process for the other bowl. Enjoy!
